Sweet Potato & Lentil Soup

1 onion - diced
3cm root ginger - diced
2 cloves garlic - mashed
1 tsp chilli powder
1 tsp paprika
1 tsp cumin
400g sweet potato - diced
4 tbsp red lentils - rinsed
400ml vegetable stock
400ml water
Fry onion until soft.

Add ginger, garlic and spices and fry for a minute or two.

Add the sweet potato, lentils, stock and water.

Bring to boil, reduce to a simmer for 20mins.
