Drop Scones
220g self-raising flour
50g caster sugar
pinch of salt
2 eggs
280ml milk
1 tbsp sunflower oil

Sift flour, sugar and salt into a bowl.
Whisk milk and eggs together in a separate bowl then gradually mix them into the dry ingredients.
Add oil and briefly mix again.
Spoon the batter onto a hot, greased pan.
Flip once bubbles have started to pop and they appear dry. Cook the other side for around a minute or until a golden brown.
