Shortbread
115g butter
55g golden caster sugar
pinch of salt
130g plain flour
40g ground rice
demerara sugar

Beat butter until soft.
Add sugar and salt.
Sift over flour and ground rice and mix to smooth dough.
Pat out to 1cm thickness and place on lined baking tray.
Chill for 15 minutes until firm.
Bake at 150 for around an hour.
Cut into pieces and sprinkle with demerara sugar.
