Chicken Soup

Roast chicken leftovers
3 carrots - grated
2 parsnips - grated
1 onion - chopped
2 leeks - sliced
2 heaped tablespoons rice
Simmer leftovers in water for 2 hrs.

Drain liquid out.

Pour a little more hot water over the bones, mix and drain again.

Add vegetables to stock and simmer for 45 mins.

Add rice and simmer for 10 mins.
