Spanish Chicken Casserole

500g chicken thighs
1 onion - diced
1 carrot - diced
2 celery - diced
1 red pepper - diced
1/2 chilli - diced
2 cloves garlic - mashed
1 can tomatoes
185ml red wine
sugar
olive oil
rice
Lightly brown chicken in casserole.

Add onion, carrots, celery, red pepper, chilli and garlic and fry for a short while.

Add wine and bring to a strong boil for a minute.

Add tomatoes and a sprinkle of sugar.

Cover and cook in an oven for 1 hour at 180°C.

Serve with rice.
